Brown Rice100 g
Bell Pepper80 g
Green Bean50 g
Lemongrass10 g
Chili5 g
Garlic5 g
Fish Sauce10 ml
Soy Sauce10 ml
Olive Oil15 ml
Sweetener5 g

Instructions

Cook brown rice according to package instructions. Set aside.

Slice chicken breast into thin strips. Thinly slice bell peppers. Trim and halve green beans. Mince lemongrass, chili (adjust to your spice preference), and garlic.

Heat olive oil in a wok or large skillet over high heat until shimmering.

Add minced lemongrass, chili, and garlic. Stir-fry for 30 seconds until fragrant.

Add chicken strips and stir-fry for 3-4 minutes until mostly cooked through.

Add bell peppers and green beans. Continue to stir-fry for 2-3 minutes until vegetables are crisp-tender.

Stir in fish sauce, soy sauce, and sweetener. Toss everything together to coat evenly.
