Lean Pork Loin with Braised Cabbage and Roasted Potatoes

- Garlic1 clove
- Olive Oil12 ml
- Apple Cider Vinegar10 ml
- Salt1 pinch
- Black Pepper1 pinch
- Pork Loin220 g
- Cabbage200 g
- Potato200 g
- Caraway Seed0.5 tsp
Instructions

Preheat oven to 200°C (390°F). Peel and cube the potatoes into 1-inch pieces. Toss with 5ml of olive oil, salt, and pepper. Spread on a baking sheet and roast for 15-20 minutes, or until tender and golden.

While potatoes roast, thinly slice the cabbage and dice the onion. Mince the garlic.

Season the pork loin with salt and pepper. Heat 5ml of olive oil in a pan over medium-high heat. Sear the pork loin for 2-3 minutes per side until browned, then reduce heat and cook until internal temperature reaches 63°C (145°F), about 5-7 minutes.

In a separate pan, heat the remaining 2ml of olive oil over medium heat. Add diced onion and cook until softened, about 3 minutes. Add minced garlic and caraway seeds, cook for 1 minute.

Add sliced cabbage and apple cider vinegar to the pan. Cover and braise for 5-7 minutes, or until cabbage is tender-crisp.
