Lean Ground Turkey Stir-Fry with Mixed Vegetables and Brown Rice

Ingredients (Serves 1)

Ground Turkey400 g
Brown Rice100 g
Bell Pepper100 g
Broccoli100 g
Carrot50 g
Ginger5 g
Garlic5 g
Soy Sauce15 ml
Sesame Oil3 g
Olive Oil5 g
Salt2 g
Black Pepper1 g

Instructions

Cook brown rice according to package directions. Set aside.

While rice cooks, prepare vegetables: dice bell pepper, chop broccoli into small florets, julienne carrot, mince ginger and garlic.

Heat olive oil in a large skillet or wok over medium-high heat.

Add ground turkey to the skillet, breaking it up with a spoon. Cook for 5-7 minutes until browned, stirring occasionally. Drain any excess fat.

Add bell pepper, broccoli, carrot, minced ginger, and minced garlic to the skillet. Stir-fry for 3-4 minutes until vegetables are tender-crisp.

Stir in soy sauce and sesame oil. Season with salt and black pepper to taste.

Serve the turkey and vegetable stir-fry immediately over the cooked brown rice.
