- Brown Rice150 g
- Garlic10 g
- Sesame Oil5 ml
- Olive Oil5 ml
- Kimchi150 g
- Bok Choy200 g
- Soy Sauce20 ml
- Ginger10 g
- Scallion10 g
Instructions

Step 1: Cook brown rice according to package instructions. While rice cooks, mince the garlic and ginger, and chop the scallions. Cut bok choy into quarters.

Step 2: Heat olive oil in a large skillet or wok over medium-high heat. Add ground beef and cook, breaking it up with a spoon, until browned and cooked through, about 5-7 minutes. Drain any excess fat.

Step 3: Add minced garlic and ginger to the skillet with the beef and cook for 1 minute until fragrant. Stir in soy sauce and sesame oil. Remove beef mixture from skillet and set aside.

Step 4: Add bok choy to the same skillet with a splash of water (if needed) and steam for 2-3 minutes until tender-crisp. Alternatively, microwave bok choy with a splash of water for 2-3 minutes.
