Lean Ground Beef & Kimchi Bowl with Steamed Bok Choy & Brown Rice

Ingredients (Serves 1)

Ground Beef300 g
Kimchi150 g
Bok Choy200 g
Brown Rice150 g
Soy Sauce20 ml
Sesame Oil5 ml
Garlic10 g
Ginger10 g
Scallion10 g
Olive Oil5 ml

Instructions

Step 1: Cook brown rice according to package instructions. While rice cooks, mince the garlic and ginger, and chop the scallions. Cut bok choy into quarters.

Step 2: Heat olive oil in a large skillet or wok over medium-high heat. Add ground beef and cook, breaking it up with a spoon, until browned and cooked through, about 5-7 minutes. Drain any excess fat.

Step 3: Add minced garlic and ginger to the skillet with the beef and cook for 1 minute until fragrant. Stir in soy sauce and sesame oil. Remove beef mixture from skillet and set aside.

Step 4: Add bok choy to the same skillet with a splash of water (if needed) and steam for 2-3 minutes until tender-crisp. Alternatively, microwave bok choy with a splash of water for 2-3 minutes.

Step 5: To assemble the bowl, place cooked brown rice in a serving bowl. Top with the seasoned ground beef, kimchi, and steamed bok choy. Garnish with chopped scallions before serving.
