Lean Ground Beef and Seasonal Vegetable Pasta

Ingredients (Serves 2)

Extra Lean Ground Beef (5% fat)700 g
Lactose-free Pasta150 g
Canned Crushed Tomatoes400 g
Onion50 g
Garlic10 g
Olive Oil5 ml
Dried Oregano3 g
Dried Basil3 g
Salt4 g
Black Pepper2 g

Instructions

Bring a large pot of salted water to a boil for the pasta.

While the water heats, finely chop the onion and garlic.

Heat the olive oil in a large pan or pot over medium-high heat.

Add the extra lean ground beef and cook, breaking it up with a spoon, until browned. Drain off any excess fat.

Add the chopped onion and cook until softened, about 5 minutes.

Add the minced garlic and cook for 1 minute more until fragrant.

Pour in the canned crushed tomatoes. Add dried oregano and basil (or fresh if using, add later). Season with salt and black pepper.

Bring the sauce to a simmer, then reduce heat and let it cook for at least 10-15 minutes, stirring occasionally.

Meanwhile, add the lactose-free pasta to the boiling water and cook according to package directions until al dente.

If using fresh herbs, stir them into the sauce in the last few minutes.

Drain the pasta and add it directly to the sauce. Toss to combine.

Divide the pasta and sauce into two serving bowls.
