Chicken Breast200 g
Quinoa30 g
Yogurt80 g
Onion70 g
Tomato150 g
Ginger-Garlic Paste20 g
Green Chili5 g
Tikka Masala Spice Blend5 g
Vegetable Oil15 g
Coriander Leaves5 g
Water100 ml

Instructions

Step 1: Rinse quinoa thoroughly. Combine quinoa with 100ml water in a small pot. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes, or until water is absorbed. Let it sit covered for 5 minutes, then fluff with a fork.

Step 2: While quinoa cooks, cut chicken breast into 1-inch pieces. Finely chop the onion, tomato, and green chili. Prepare ginger-garlic paste.

Step 3: In a bowl, marinate chicken pieces with half of the yogurt and half of the tikka masala spice blend. Set aside.

Step 4: Heat vegetable oil in a pan over medium heat. Add chopped onion and sauté until translucent (3-4 minutes).

Step 5: Add ginger-garlic paste and green chili. Sauté for 1 minute until aromatic.

Step 6: Stir in the remaining tikka masala spice blend and chopped tomato. Cook until tomatoes soften and the oil starts to separate (3-4 minutes).

Step 7: Add the marinated chicken to the pan and cook for 5-7 minutes, until chicken is browned on all sides.

Step 8: Reduce heat to low. Stir in the remaining yogurt until well combined and the sauce is creamy. Simmer for 2-3 minutes, ensuring chicken is cooked through.

Step 9: Garnish with fresh coriander leaves and serve hot with the cooked quinoa.
