Instructions

Rinse quinoa thoroughly. Cook quinoa according to package directions. (Usually 1 part quinoa to 2 parts water, simmer for 15 minutes, then rest).

While quinoa cooks, slice chicken breast into thin strips. Chop asparagus into 2-inch pieces and bell pepper into thin strips.

Mince ginger and garlic.

Heat sesame oil in a large wok or skillet over medium-high heat. Add chicken and stir-fry until cooked through, about 5-7 minutes. Season with salt and pepper.

Add asparagus, bell pepper, minced ginger, and garlic to the pan. Stir-fry for 3-5 minutes until vegetables are tender-crisp.

Pour in the soy sauce and toss everything to combine.

Serve the stir-fry immediately over the cooked quinoa.
