Lean Beef & Summer Vegetable Stir-fry
A quick and vibrant stir-fry featuring lean beef sirloin and an abundance of seasonal vegetables like bell peppers, zucchini, and green beans, served over fluffy brown rice with a savory soy-ginger sauce.

- Zucchini100 g
- Green Beans80 g
- Soy Sauce10 ml
- Ginger5 g
Instructions

Rinse brown rice thoroughly. Combine brown rice with 90ml of water in a small saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes, or until water is absorbed. Let stand covered for 5 minutes.

While rice cooks, slice the beef sirloin into thin strips. Dice the bell pepper, zucchini, and onion. Mince the garlic and ginger.

Heat olive oil in a large skillet or wok over medium-high heat. Add beef strips and stir-fry for 3-4 minutes until browned. Remove beef from the pan and set aside.

Add bell pepper, zucchini, onion, minced garlic, and ginger to the same pan. Stir-fry for 4-5 minutes until vegetables are tender-crisp.

Return the beef to the pan. Add soy sauce and sesame oil. Toss to coat everything evenly and cook for 1 minute.
