Ensure brown rice is cooked. If using uncooked brown rice, prepare according to package directions (approx. 20-25 min), doing so concurrently with stir-fry cooking, or use quick-cook/pre-cooked brown rice for faster preparation.

Chop broccoli into florets, slice bell pepper, slice carrots into thin rounds or matchsticks, grate fresh ginger, and mince garlic.

Heat olive oil in a large skillet or wok over medium-high heat. Add lean ground beef and cook, breaking it up with a spoon, for 5-7 minutes until browned. Drain any excess fat.

Add carrots, bell pepper, broccoli, ginger, and garlic to the pan. Stir-fry for 5-7 minutes until vegetables are tender-crisp.
