Large Chicken and Quinoa Salad with Fresh Vegetables

Ingredients (Serves 2)

Chicken Breast190 g
Quinoa50 g
Mixed Greens100 g
Radish25 g
Cucumber50 g
Cherry Tomato50 g
Olive Oil7.5 ml
Lemon Juice7.5 ml
Mustard5 g
Salt0.5 tsp
Pepper0.3 tsp

Instructions

Step 1: If not pre-cooked, prepare quinoa according to package instructions (cook time 15-20 minutes). Fluff with a fork and set aside to cool slightly.

Step 2: While quinoa cooks, slice chicken breast into thin strips or cubes. Heat a skillet over medium-high heat with 5ml of olive oil. Add chicken and pan-sear for 5-7 minutes, until cooked through and lightly browned. Season with salt and pepper.

Step 3: Wash and chop mixed greens, radishes, cucumber, and cherry tomatoes. In a large bowl, combine the cooked quinoa, chicken, and chopped vegetables.

Step 4: In a small bowl, whisk together remaining 10ml olive oil, lemon juice, mustard, salt, and pepper to make the dressing. Pour the dressing over the salad and toss gently to combine. Serve immediately.
