Korean-Inspired Beef and Broccoli Rice Bowl

Ingredients (Serves 2)

beef steak (sirloin or flank)350 g
dry white rice120 g
broccoli florets300 g
onion100 g
garlic (minced)10 g
fresh ginger (grated)10 g
soy sauce (dairy-free)20 ml
sesame oil15 ml
Gochujang30 g
olive oil10 ml
water or beef broth100 ml
salt1 to taste
black pepper1 to taste

Instructions

Cook the dry white rice according to package directions. Keep warm.

Slice the beef steak thinly against the grain.

In a bowl, whisk together soy sauce, sesame oil, grated ginger, minced garlic, Gochujang, and water or beef broth to make the sauce.

Heat olive oil in a large skillet or wok over high heat.

Add the sliced beef and season with salt and pepper. Stir-fry quickly until browned but not fully cooked through, about 2-3 minutes. Remove beef from the pan and set aside.

Add the broccoli florets and sliced onion to the same pan. Stir-fry for 3-5 minutes until vegetables are tender-crisp.

Pour the prepared sauce into the pan with the vegetables. Bring to a simmer.

Return the beef to the pan and toss everything together to coat the beef and vegetables in the sauce. Cook for another 1-2 minutes until the beef is cooked through and the sauce has thickened slightly.

Serve the beef and broccoli mixture over the hot cooked rice.

Garnish with sesame seeds or sliced green onions if desired (optional new ingredients).
