Italian Turkey Meatball & Zucchini Noodle Skillet with Marinara

- Whole Grain Pasta50 g
- Canned Crushed Tomatoes200 g
- Onion50 g
- Garlic10 g
- Olive Oil21 g
- Salt1 pinch
- Black Pepper1 pinch
- Lean Ground Turkey150 g
- Zucchini250 g
- Italian Seasoning5 g
Instructions

Bring a small pot of salted water to a boil for the pasta. Cook the whole grain pasta according to package directions.

While pasta cooks, finely chop the onion and mince the garlic.

In a bowl, combine the lean ground turkey with half of the Italian seasoning, salt, and pepper. Form into small meatballs (about 1-inch diameter).

Heat 1 tbsp (approx. 14g) of olive oil in a large skillet over medium-high heat. Add the meatballs and brown on all sides, about 5-7 minutes. Remove meatballs from skillet and set aside.

Add the remaining 0.5 tbsp (approx. 7g) of olive oil to the skillet. Sauté the chopped onion for 2-3 minutes until softened. Add the minced garlic and cook for 1 minute until fragrant.
