Italian Ground Pork and Cabbage Skillet

Pork220 g
Cabbage300 g
Onion50 g
Garlic10 g
Olive Oil10 g
Tomato Paste30 g
Oregano2 g
Basil2 g
Salt2 g
Pepper1 g

Instructions

Finely chop 50g onion (or leek) and mince 10g garlic. Shred 300g cabbage (6 minutes).

Heat 10g olive oil in a large skillet or pot over medium-high heat. Add 220g ground pork and cook, breaking it up with a spoon, until browned, about 5 minutes (5 minutes).

Drain excess fat if necessary, leaving a small amount in the pan. Add the chopped onion/leek and cook until softened, about 3 minutes (3 minutes).

Add the minced garlic, 2g dried oregano, and 2g dried basil. Cook for 1 minute until fragrant (1 minute).

Add the shredded cabbage and 30g tomato paste to the skillet. Season with 2g salt and 1g pepper. Stir to combine (2 minutes).

Cover the skillet and cook, stirring occasionally, until the cabbage is tender-crisp, about 8 minutes (8 minutes).

Uncover and cook for another 2 minutes if needed to reduce any excess liquid (2 minutes).
