Instructions

Step 1: Preheat oven to 400°F (200°C). Bring a pot of salted water to a boil for the pasta (takes about 5 minutes).

Step 2: Slice the chicken breast into 1-inch pieces. Chop the zucchini, bell pepper, and red onion into similar-sized chunks. Halve the cherry tomatoes.

Step 3: On a large baking sheet, combine the chicken, zucchini, bell pepper, red onion, and cherry tomatoes. Drizzle with olive oil and toss to coat evenly.
