High-Protein Seitan Stir-fry with Seasonal Greens & Rice Noodles

Seitan175 g
Rice Noodles60 g
Mushroom100 g
Spinach100 g
Soy Sauce18.8 ml
Sesame Oil11.3 ml
Garlic0.5 clove
Ginger5 g

Instructions

Bring a pot of water to boil for the rice noodles. Cook noodles according to package directions, usually 3-5 minutes. Drain and set aside.

Thinly slice the seitan. Slice mushrooms. Mince garlic and grate ginger.

Heat sesame oil in a large wok or frying pan over medium-high heat. Add seitan and cook for 3-4 minutes until lightly browned.

Add mushrooms, garlic, and ginger to the pan. Stir-fry for 3 minutes until mushrooms soften.

Add spinach and soy sauce. Cook for 1-2 minutes until spinach wilts. Add the cooked rice noodles and toss everything together to combine. Serve immediately.
