Zucchini200 g
Tomato100 g
Light Coconut Milk100 ml
Onion50 g

Curry Powder5 g
Ginger5 g
Water300 ml

Step 1: Dice the onion, mince the garlic, grate the ginger, and chop the zucchini and fresh tomato.

Step 2: Heat olive oil in a pot over medium heat. Add onion, garlic, and ginger, sauté for 3 minutes until fragrant.

Step 3: Stir in curry powder and cook for 1 minute. Add rinsed red lentils, chopped zucchini, diced tomato, and water. Bring to a boil, then reduce heat and simmer for 5 minutes, stirring occasionally, until lentils are tender.
