High-Protein Mince Beef & Tomato Sauce with Whole Wheat Pasta

Ingredients (Serves 1)

Mince Beef300 g
Whole Wheat Pasta50 g
Tomato250 g
Onion50 g
Garlic10 g
Olive Oil28 g
Dried Oregano1 tsp
Fresh Basil5 g
Salt1 pinch
Black Pepper1 pinch

Instructions

Bring a pot of salted water to a boil for the pasta.

While water heats, dice the onion and mince the garlic. Roughly chop the fresh tomatoes.

Heat the olive oil in a large skillet or deep pan over medium-high heat. Add the mince beef and break it up with a spoon. Cook for 5-7 minutes until browned, stirring occasionally. Drain any excess fat if necessary.

Add the diced onion and minced garlic to the pan with the beef. Cook for 3-4 minutes until softened and fragrant.

Add the chopped fresh tomatoes and dried oregano to the pan. Stir well and bring to a simmer. Reduce heat to medium-low and let it cook for 5-7 minutes, allowing the flavors to meld and tomatoes to break down. Season with salt and pepper to taste.

While the sauce simmers, add the whole wheat pasta to the boiling water and cook according to package instructions until al dente.

Once pasta is cooked, drain it and add directly to the sauce. Stir to combine. If using fresh basil, stir in chopped basil just before serving.
