Ingredients (Serves 1)

Canned Chicken Breast (Drained)200 g
Canned Black Beans (Rinsed and Drained)100 g
Canned Corn (Drained)50 g
Salsa100 g
Shredded Cheese (Cheddar or Mexican Blend)100 g
Fresh Spinach (Seasonal)50 g
Bell Pepper (Seasonal)50 g
Lime Juice15 ml
Chili Powder1 g
Cumin1 g

Instructions

Place the fresh spinach and sliced bell pepper in the bottom of a large bowl.

Layer the rinsed black beans and drained corn over the greens.

Add the drained canned chicken breast on top of the bean and corn layer.

Spoon the salsa over the chicken.

Sprinkle the shredded cheese evenly over the bowl.

Drizzle with fresh lime juice and sprinkle with chili powder and cumin.
