Ingredients (Serves 2)

cooked chicken breast300 g
dry rice40 g
cooked black beans80 g
corn (canned or frozen)80 g
onion75 g
bell pepper75 g
olive oil24 ml
chili powder5 g
cumin3 g
salt2 g
black pepper1 g
salsa50 g
fresh cilantro10 g
lime0.5 pcs

Instructions

If using dry rice, cook 40g dry rice according to package directions (this will yield approximately 120g cooked rice).

Finely chop the onion and bell pepper.

Heat 24 ml of olive oil in a large skillet over medium-high heat.

Add the chopped onion and bell pepper and cook for 5-7 minutes until softened.

Add the cooked chicken breast, cooked black beans, and corn to the skillet.

Stir in the chili powder and cumin. Season with salt and black pepper.

Add the cooked rice to the skillet. Stir everything together to combine.

Cook for another 5-7 minutes, stirring occasionally, until heated through.

Squeeze fresh lime juice over the skillet just before serving.

Garnish with fresh cilantro.
