Vegan Protein Powder35 g
Cherry Tomatoes150 g
Cucumber150 g
Red Onion30 g
Fresh Basil5 g
Olive Oil25 g
Lemon Juice15 ml

Instructions

Step 1: If using lupini beans in brine, drain and rinse them thoroughly. If they are not shelled, remove the outer skin. Halve the cherry tomatoes, dice the cucumber, and thinly slice the red onion. Roughly chop the fresh basil.

Step 2: In a large bowl, combine the prepared lupini beans, cherry tomatoes, diced cucumber, and sliced red onion.

Step 3: In a small bowl, whisk together the olive oil, lemon juice, vegan protein powder, chopped basil, salt, and black pepper until well combined.
