Ingredients (Serves 2)

Shelled edamame (frozen or pre-cooked)400 g
White cabbage, shredded300 g
Carrot, shredded100 g
Radishes, sliced100 g
Pumpkin seeds20 g
Sunflower seeds20 g
Hemp seeds20 g
Tahini20 g
White miso paste (lactose-free)20 g
Unflavored vegan protein powder60 g
Rice vinegar20 ml
Water40 ml
Ginger paste or powder5 g
Garlic paste or powder5 g

Instructions

If using frozen edamame, place them in a bowl and cover with hot water for 1-2 minutes to defrost, then drain.

Prepare the vegetables: Shred the white cabbage and carrot, and slice the radishes.

In a small bowl, whisk together tahini, miso paste, vegan protein powder, rice vinegar, water, ginger paste/powder, and garlic paste/powder to create the dressing.

In a large bowl, combine the edamame, shredded cabbage, shredded carrot, sliced radishes, pumpkin seeds, sunflower seeds, and hemp seeds.

Pour the dressing over the ingredients in the large bowl and toss gently to coat everything.
