Instructions

Bring a large pot of salted water to a boil for the pasta.

While the water heats, finely chop the onion and garlic (5 minutes).

Slice the mushrooms (5 minutes).

Add the pasta to the boiling water and cook according to package directions (typically 10-12 minutes).

While the pasta cooks, heat the olive oil in a large pan over medium heat. Add the chopped onion and sauté until softened, about 5 minutes.

Add the sliced mushrooms and cook, stirring occasionally, until they release their liquid and start to brown, about 7-10 minutes.

Stir in the minced garlic and cook for 1 minute until fragrant.

Rinse and drain the cooked white beans (1 minute).

Add the white beans, vegetable broth, plant cream, nutritional yeast, salt, and pepper to the pan. Bring to a gentle simmer (3 minutes).

Reduce heat and let the sauce simmer for 5 minutes to thicken slightly.

Just before serving, stir in the fresh spinach and cook until wilted, about 2 minutes.
