High-Protein Chicken & Vegetable Stir-fry with Brown Rice

Chicken Breast260 g
Brown Rice220 g
Bell Pepper100 g
Zucchini75 g
Green Bean75 g
Soy Sauce15 ml
Ginger5 g
Garlic5 g
Sesame Oil5 ml
Olive Oil10 ml
Salt1 pinch
Black Pepper1 pinch

Instructions

Slice the chicken breast into thin strips. Mince the garlic and ginger. Slice the bell pepper and zucchini into thin strips. Trim the green beans.

Heat the olive oil in a large skillet or wok over medium-high heat for 2 minutes.

Add the chicken strips to the hot pan and stir-fry for 5-7 minutes until browned and cooked through. Remove chicken from the pan and set aside.

Add the bell pepper, zucchini, and green beans to the same pan. Stir-fry for 5-7 minutes until vegetables are tender-crisp.

Return the cooked chicken to the pan. Add the minced garlic and ginger, and stir-fry for 1 minute until fragrant.

Pour in the soy sauce and sesame oil. Toss everything to coat evenly and cook for 1-2 minutes until the sauce slightly thickens.

Serve the stir-fry immediately over the cooked brown rice.
