- Broccoli125 g

- Soy Sauce15 ml

Instructions

Step 1: Rinse quinoa thoroughly. In a small saucepan, combine 110g quinoa with 220ml water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes, or until water is absorbed. Let stand for 5 minutes, then fluff with a fork.

Step 2: While quinoa cooks, dice chicken breast into 1-inch pieces. Mince garlic and ginger. Cut broccoli into bite-sized florets.

Step 3: Heat 10ml olive oil in a large skillet or wok over medium-high heat. Add chicken and stir-fry for 4-5 minutes until cooked through and lightly browned. Remove chicken from the pan and set aside.

Step 4: Add remaining 5ml olive oil to the pan. Add broccoli florets and stir-fry for 3-4 minutes until tender-crisp. Add minced garlic and ginger and cook for 1 minute until fragrant.
