- Black Bean0.3 cup
- Corn0.3 cup
- Avocado0.1 medium
- Fajita Seasoning1 tbsp
- Lime0.5 fruit
- Cashew20 g
- Water2 tbsp
Instructions

Slice chicken breast into thin strips. Slice bell peppers and onion into thin strips. Rinse and drain black beans. Prepare cauliflower rice (steam or microwave according to package directions).

For the cashew crema: Soak cashews in hot water for 5 minutes, then drain. Blend cashews with 2 tbsp water, 1/2 of the lime juice, and a pinch of salt until smooth and creamy. Set aside.

Heat olive oil in a large skillet or cast-iron pan over medium-high heat. Add chicken strips and cook for 4-5 minutes until browned.

Add sliced bell peppers and onion to the skillet. Sprinkle with fajita seasoning. Cook for 5-7 minutes, stirring occasionally, until vegetables are tender-crisp.
