High-Protein Chicken Fajita Bowl with Cauliflower Rice & Cashew Crema

Bell Pepper1 large
Onion0.5 medium
Black Bean0.3 cup
Corn0.3 cup
Cauliflower Rice2 cup
Avocado0.1 medium
Olive Oil1 tsp
Fajita Seasoning1 tbsp
Lime0.5 fruit
Cashew20 g
Water2 tbsp
Salt0.3 tsp

Instructions

Slice chicken breast into thin strips. Slice bell peppers and onion into thin strips. Rinse and drain black beans. Prepare cauliflower rice (steam or microwave according to package directions).

For the cashew crema: Soak cashews in hot water for 5 minutes, then drain. Blend cashews with 2 tbsp water, 1/2 of the lime juice, and a pinch of salt until smooth and creamy. Set aside.

Heat olive oil in a large skillet or cast-iron pan over medium-high heat. Add chicken strips and cook for 4-5 minutes until browned.

Add sliced bell peppers and onion to the skillet. Sprinkle with fajita seasoning. Cook for 5-7 minutes, stirring occasionally, until vegetables are tender-crisp.

Stir in black beans and corn, cooking for another 2-3 minutes until heated through.

Assemble the bowl: Place cauliflower rice at the bottom. Top with the chicken and vegetable mixture. Garnish with diced avocado and a drizzle of cashew crema. Serve with remaining lime wedges.
