Soft Tortillas (corn or flour, dairy-free)5 count
Medium Onion0.5 cup diced
Frozen Mixed Vegetables1.5 cup
Olive Oil1.5 tbsp
Taco Seasoning (check dairy-free)1.5 tbsp
Salt0.3 tsp
Black Pepper0.1 tsp

Instructions

Heat 1.5 tbsp of olive oil in a large skillet over medium-high heat.

Add the diced onion and cook until softened, about 3-4 minutes.
