High-Protein Chicken and Seasonal Vegetable Stir-Fry with Rice

Chicken breast300 g
Bell pepper200 g
Zucchini200 g
Soy sauce30 ml
Ginger10 g
Garlic10 g
Olive oil1.5 tsp
Rice100 g

Instructions

Cook rice according to package instructions. (If using quick-cook rice, this can be done simultaneously with stir-fry prep).

Slice chicken breast into thin strips. Dice bell pepper and zucchini. Mince ginger and garlic.

Heat olive oil in a large wok or frying pan over high heat.

Add chicken strips and stir-fry for 5-7 minutes until cooked through and lightly browned.

Add bell pepper, zucchini, minced ginger, and minced garlic to the pan. Stir-fry for 5-7 minutes until vegetables are tender-crisp.

Pour in soy sauce and toss everything to coat.

Serve the stir-fry immediately over the cooked rice.
