cooked black beans86 g
corn (canned or frozen)43 g

Instructions

Cook the dry rice according to package instructions. Set aside.

Dice the onion and bell pepper. Mince the garlic.

Heat 10ml of olive oil in a skillet over medium heat. Add the diced onion and bell pepper and cook until softened, about 5-7 minutes.

Add the minced garlic, cumin, and chili powder. Cook for 1 minute until fragrant.

Add the cooked chicken breast (shredded or diced), cooked black beans, and corn to the skillet. Stir to combine and heat through, about 5 minutes.

In a small bowl, whisk together the remaining 23.6ml of olive oil, the juice of the lime, salt, and black pepper to make a dressing.

Divide the cooked rice between two bowls.

Spoon the chicken, bean, and corn mixture over the rice.
