Cooked boneless, skinless chicken breast220 g
Canned black beans, rinsed and drained150 g
Canned or frozen corn80 g
Bell pepper (any color)80 g
Onion60 g
Olive oil10 ml
Cumin2 g
Chili powder2 g
Smoked paprika1 g
Salt0.5 tsp
Black pepper0.3 tsp
Cooked brown rice150 g

Instructions

Dice the bell pepper and onion into bite-sized pieces.

Heat the olive oil in a large skillet or wok over medium-high heat.

Add the diced bell pepper and onion and stir-fry for 4-5 minutes until slightly softened.

Add the cooked chicken, rinsed black beans, corn, cumin, chili powder, smoked paprika, salt, and pepper to the skillet.

Stir well to combine and cook for another 5-7 minutes, stirring occasionally, until everything is heated through and flavors have melded.

Serve the chicken and black bean stir-fry mixture over the cooked brown rice.
