High-Protein Black Bean and Vegetable Stir-fry with Rice

Ingredients (Serves 2)

Dry rice60 g
Cooked black beans150 g
Green beans75 g
Bell pepper75 g
Onion50 g
Garlic (cloves)2 pcs
Fresh ginger5 g
Olive oil12.5 ml
Soy sauce (or tamari for gf)10 ml
Salt0.5 g
Black pepper0.5 g

Instructions

Cook the dry rice according to package instructions. Keep warm.

Prepare the vegetables: Trim green beans, slice bell pepper and onion, mince garlic and grate fresh ginger.

Heat olive oil in a large skillet or wok over medium-high heat.

Add onion and bell pepper and stir-fry for 3-4 minutes until slightly tender.

Add green beans, minced garlic, and grated ginger. Stir-fry for another 3-4 minutes.

Stir in cooked black beans and soy sauce (or tamari). Cook for 2-3 minutes until everything is heated through and coated in sauce.

Season with salt and black pepper to taste.

Serve the stir-fry over the cooked rice.
