Hearty Smoked Tofu and Leek Soup with Potatoes

Ingredients (Serves 2)

Smoked tofu150 g
Potatoes200 g
Leek (white and light green parts)150 g
Vegetable broth (lactose-free)600 ml
Olive oil10 ml
Fresh thyme2 g
Bay leaf0.5 g
Salt1 g
Black pepper0.5 g
Fresh parsley (for garnish)3 g

Instructions

Dice the smoked tofu into 1-2 cm cubes.

Peel and cube the potatoes into 1-2 cm pieces.

Wash the leek thoroughly and slice it thinly.

Heat olive oil in a large pot or Dutch oven over medium heat. Add the smoked tofu cubes and pan-fry until lightly golden and crispy on all sides.

Add the sliced leeks to the pot and cook, stirring occasionally, until softened, about 5-7 minutes.

Add the cubed potatoes, vegetable broth, fresh thyme, and bay leaf to the pot. Bring to a boil, then reduce heat and simmer, partially covered, for 15-20 minutes, or until the potatoes are tender.

Season the soup with salt and pepper to taste. Remove the bay leaf before serving.

Ladle the soup into two bowls and garnish with chopped fresh parsley.
