Ingredients (Serves 2)

Canned Sardines in Olive Oil (drained weight)200 g
Canned Brown Lentils (rinsed and drained)400 g
Cucumber200 g
Cherry Tomatoes200 g
Red Onion50 g
Olive Oil10 ml
Red Wine Vinegar15 ml
Fresh Parsley (chopped)10 g
Salt2 g
Black Pepper1 g

Instructions

Rinse and drain the canned brown lentils.

Drain the canned sardines, reserving 5 ml of the olive oil.

Finely dice the red onion, cucumber, and cherry tomatoes.

Chop the fresh parsley.

In a large bowl, combine the drained lentils, diced vegetables, and chopped parsley.

Gently flake the sardines into the bowl, removing any bones if preferred.

In a small bowl, whisk together the reserved olive oil, additional 5 ml olive oil, red wine vinegar, salt, and black pepper to make the dressing.

Pour the dressing over the salad and toss gently to combine.
