Hearty Pork and Leek Stew with Potatoes

- Pork Loin175 g
- Potatoes175 g
- Leek125 g
- Vegetable Broth175 ml
- Fresh Parsley5 g
Instructions

Step 1: Dice pork loin into 1-inch cubes. Peel and dice potatoes into 1/2-inch pieces. Wash and thinly slice leeks (white and light green parts only). Peel and dice carrot.

Step 2: Heat olive oil in a large pot or Dutch oven over medium-high heat. Add pork and sear until lightly browned on all sides, about 3-4 minutes. Remove pork and set aside.
