Hearty Pork and Cabbage Skillet with Quinoa

- Carrot75 g
- Onion50 g
- Olive Oil1.5 tsp
- Pork Loin200 g
- Cabbage150 g
- Vegetable Broth50 ml
- Paprika0.5 tsp
- Caraway Seed0.3 tsp

If not already cooked, rinse quinoa thoroughly and cook according to package directions (usually 1 part quinoa to 2 parts water) for about 15 minutes. Fluff with a fork.

Cut pork loin into thin strips. Thinly slice cabbage, julienne carrots, and finely chop onion.

Heat olive oil in a large skillet over medium-high heat. Add pork strips and cook until browned on all sides (about 3-4 minutes). Remove pork from skillet and set aside.

Add onion, carrots, and cabbage to the same skillet. Sauté for 5-7 minutes until vegetables begin to soften.
