Hearty Pork and Cabbage Skillet with Boiled Potatoes

Ingredients (Serves 2)

Pork Tenderloin175 g
Cabbage300 g
Potato150 g
Onion0.5 large
Carrot50 g
Olive Oil0.8 tbsp
Chicken Broth100 ml
Apple Cider Vinegar1 tbsp
Paprika0.5 tsp
Caraway Seed0.3 tsp
Salt0.5 tsp
Black Pepper0.3 tsp

Instructions

Peel and dice the potatoes into 2 cm cubes. Place them in a pot, cover with water, add a pinch of salt, and bring to a boil. Cook for 8-10 minutes, or until tender.

While potatoes cook, thinly slice the pork tenderloin into strips. Season with salt, pepper, and paprika.

Thinly slice the cabbage, onion, and julienne the carrots.

Heat olive oil in a large skillet or pot over medium-high heat. Add the pork and sear until lightly browned on all sides, about 3-4 minutes. Remove pork and set aside.

Add the sliced onion and carrots to the same skillet and sauté for 3-4 minutes until softened.

Add the sliced cabbage and caraway seeds to the skillet. Cook, stirring occasionally, until the cabbage begins to wilt, about 3-5 minutes.

Pour in the chicken broth and apple cider vinegar. Bring to a simmer, then reduce heat, cover, and let it cook for 5 minutes until cabbage is tender-crisp.

Return the seared pork to the skillet. Stir to combine and cook for another 1-2 minutes until pork is heated through.

Drain the cooked potatoes. Serve the pork and cabbage skillet alongside the boiled potatoes.
