Hearty Lentil & Tofu Curry with Brown Rice

Brown Rice90 g
Firm Tofu175 g
Red Lentils87.5 g
Coconut Milk175 ml
Olive Oil9.4 ml
Leek37.5 g
Garlic1 clove
Ginger12.5 g
Bell Pepper100 g
Courgette75 g
Canned Chopped Tomatoes100 g

Instructions

Step 1: Cook the brown rice according to package instructions. This usually takes about 20-25 minutes, so start it first.

Step 2: While rice cooks, prepare vegetables: slice leek, mince garlic and ginger, dice bell peppers and courgette. Press and cube the tofu.

Step 3: In a large pot or deep pan, heat the olive oil over medium heat. Add sliced leek and sauté for 3-4 minutes until softened.

Step 4: Add minced garlic and grated ginger, sauté for 1 minute until fragrant.

Step 5: Stir in diced bell peppers and courgette. Cook for 3-4 minutes until slightly tender.

Step 6: Add the rinsed red lentils, canned chopped tomatoes, coconut milk, vegetable broth, curry powder, turmeric, cumin, salt, and black pepper. Bring to a simmer.

Step 7: Stir in the cubed tofu. Reduce heat to low, cover, and let simmer for 5-7 minutes, or until lentils are tender and flavors have melded. Stir occasionally to prevent sticking.

Step 8: Taste and adjust seasoning if needed. Serve the curry hot over the cooked brown rice, garnished with fresh chopped coriander.
