Canned Crushed Tomatoes194.4 g

Garlic1.5 cloves
Olive Oil13.9 ml
Fresh Spinach66.7 g
Dried Basil0.5 tsp
Dried Oregano0.5 tsp

Instructions

Step 1: Bring a pot of salted water to a boil for the pasta. Cook lentil pasta according to package directions (usually 8-10 minutes).

Step 2: While pasta cooks, finely chop the onion and mince the garlic.

Step 3: In a large saucepan or deep skillet, heat olive oil over medium heat. Add onion and cook until softened, about 3-4 minutes.

Step 4: Add minced garlic and red lentils (no need to pre-soak quick-cooking lentils) and cook for 1 minute until fragrant.

Step 5: Pour in the canned crushed tomatoes, dried basil, oregano, salt, and black pepper. Bring to a simmer, then reduce heat to low, cover, and cook for 10-12 minutes, or until lentils are tender.

Step 6: Stir in the fresh spinach during the last 2-3 minutes of cooking the sauce, allowing it to wilt.

Step 7: Drain the cooked pasta and add it directly to the sauce. Toss to combine. Serve immediately.
