Hearty Lentil and Vegetable Soup with Rice

Ingredients (Serves 2)

Brown lentils (dry)75 g
Water or broth400 ml
Onion50 g
Carrots50 g
Bell pepper (any color)50 g
Broccoli florets50 g
Garlic (minced)5 g
Olive oil8 ml
Cooked white rice100 g
Salt1 g
Black pepper (freshly ground)0.5 g

Instructions

Rinse the brown lentils under cold water.

Heat olive oil in a large pot or Dutch oven over medium heat.

Add diced onion, carrots, bell pepper, and garlic. Sauté for 5-7 minutes until vegetables are slightly softened.

Add the rinsed lentils and water or broth to the pot. Bring to a boil.

Reduce heat, cover, and simmer for 20-25 minutes, or until lentils are tender. Stir occasionally.

Add the broccoli florets and cook for another 5-7 minutes until tender-crisp.

Season the soup generously with salt and black pepper.

Serve the soup hot over cooked white rice.
