Ingredients (Serves 1)

Lean ground beef180 g
Onion75 g
Bell pepper100 g
Zucchini100 g
Garlic5 g
Canned diced tomatoes150 g
Olive oil10 ml
Paprika3 g
Dried oregano2 g
Salt2 g
Black pepper1 g
Small potatoes260 g

Instructions

Preheat oven to 200°C.

Wash and cut the potatoes into bite-sized pieces. Toss with 5 ml of olive oil, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes, or until tender and browned.

While potatoes are roasting, prepare the skillet.

Heat the remaining 5 ml of olive oil in a large skillet over medium-high heat.

Add the ground beef and cook, breaking it up with a spoon, until browned.

Drain off any excess fat.

Add the chopped onion, bell pepper, zucchini, and minced garlic to the skillet. Sauté for 5-7 minutes until vegetables start to soften.

Stir in the canned diced tomatoes, paprika, oregano, salt, and pepper.

Bring to a simmer, then reduce heat and cook for 10-15 minutes, stirring occasionally, allowing flavors to meld.
