Hearty Chicken & Root Vegetable Skillet

- Onion45 g

- Parsnips85 g

Instructions

Dice the chicken breast into 2 cm cubes. Peel and chop the potatoes, carrots, and parsnips into 1.5 cm pieces. Finely chop the onion and mince the garlic. (10 minutes)

Heat the olive oil in a large skillet or pan over medium-high heat. Add the diced chicken and sear for 4 minutes until lightly browned on all sides. Remove chicken and set aside. (4 minutes)

Add the chopped onion, garlic, potatoes, carrots, and parsnips to the same skillet. Sauté for 6 minutes, stirring occasionally, until vegetables start to soften and brown. (6 minutes)

Stir in the paprika, thyme, salt, and pepper. Return the chicken to the skillet. Pour in the chicken broth. (2 minutes)
