Chicken Breast175 g
Brown Lentil60 g
Carrot25 g
Celery25 g
Onion25 g
Spinach50 g
Olive Oil14 ml
Tomato Paste15 g
Vegetable Broth100 ml
Salt2 g
Black Pepper1 g

Instructions

Step 1: Rinse brown lentils thoroughly. Dice onion, carrot, and celery.

Step 2: Heat olive oil in a large skillet or pot over medium heat. Add diced onion, carrot, and celery. Sauté for 3-4 minutes until softened.

Step 3: Add chicken breast, cut into bite-sized pieces, to the skillet. Cook for 3-5 minutes, stirring occasionally, until browned on all sides.

Step 4: Stir in tomato paste, lentils, and vegetable broth. Bring to a simmer, then reduce heat, cover, and cook for 5-7 minutes, or until lentils are tender and most liquid is absorbed.

Step 5: Stir in fresh spinach until wilted. Season with salt and pepper to taste. Serve hot.
