Instructions

Step 1: Dice the chicken breast into 1-inch pieces. Peel and dice potatoes into 1/2-inch cubes. Peel and slice carrots into thin rounds. Mince onion and garlic.

Step 2: Heat olive oil in a large skillet or pan over medium-high heat. Add chicken and cook until lightly browned on all sides, about 4-5 minutes. Remove chicken from the pan and set aside.
