Carrot50 g
Zucchini75 g
Bell Pepper75 g
Olive Oil7.5 g
Garlic1 clove
Onion0.5 small
Chicken Broth50 ml
Parsley2.5 g
Salt0.5 tsp
Black Pepper0.3 tsp
Paprika0.5 tsp

Instructions

Step 1: Cook brown rice according to package instructions (this typically takes 15-20 minutes, so start it first).

Step 2: While rice cooks, dice chicken breast into 1-inch pieces. Chop onion, mince garlic, and dice carrot, zucchini, and bell pepper.

Step 3: Heat olive oil in a large skillet or wok over medium-high heat (1 minute). Add chicken and cook until browned on all sides, about 4-5 minutes. Remove chicken from skillet and set aside.

Step 4: Add onion, garlic, and carrots to the same skillet. Sauté for 3-4 minutes until onion softens.

Step 5: Add bell pepper and zucchini to the skillet. Cook for another 2-3 minutes.

Step 6: Return chicken to the skillet. Pour in chicken broth and stir in paprika, salt, and pepper. Bring to a simmer and cook for 2-3 minutes until chicken is cooked through and vegetables are tender-crisp.
