Instructions

Dice chicken breast into 1-inch pieces. Peel and dice potatoes and carrots into small, uniform cubes for quicker cooking. Finely chop the onion.

Heat olive oil in a large skillet or pan over medium-high heat. Add chicken and cook until browned on all sides, about 4-5 minutes. Remove chicken and set aside.

Add diced potatoes, carrots, and onion to the same skillet. Sauté for 5-7 minutes, stirring occasionally, until vegetables start to soften and brown.

Stir in paprika, salt, and black pepper. Return chicken to the skillet, add chicken broth. Bring to a simmer, then reduce heat, cover, and cook for another 5 minutes, or until chicken is cooked through and vegetables are tender.

Stir in fresh chopped parsley just before serving.
