Instructions

Dice the sausage into bite-sized pieces. Peel and dice the potatoes, onion, and carrot. Roughly chop the cabbage (10 minutes).

Heat the olive oil in a large skillet or pan over medium-high heat.

Add the diced sausage to the skillet and cook, stirring occasionally, until browned on all sides, about 5-7 minutes.

Add the diced onion and carrot to the skillet and cook, stirring, until softened, about 5 minutes.

Stir in the diced potatoes and chopped cabbage. Add the water, salt, and pepper. Stir to combine.

Bring the mixture to a simmer, then cover and reduce heat to medium-low. Cook, stirring occasionally, until the potatoes are tender and the cabbage is wilted, about 7-10 minutes.

Remove lid, increase heat slightly if needed, and cook uncovered for another 2-3 minutes to reduce any excess liquid.
