Hearty Beef & Root Vegetable Stew

Ingredients (Serves 3)

lean beef sirloin/flank steak500 g
potatoes500 g
carrots200 g
yellow onion150 g
garlic15 g
dried herbs15 g
water500 ml
soy sauce (or tamari)45 ml
cooking oil20 ml
cornstarch20 g
salt3 g
black pepper1.5 g

Instructions

Cut the lean beef sirloin/flank steak into 2.5 cm cubes. Season generously with salt and black pepper.

Dice the onion, carrots, and potatoes into roughly 2 cm pieces. Mince the garlic.

Heat 10 ml of cooking oil in a large heavy-bottomed pot or Dutch oven over medium-high heat. Add the beef in batches and sear on all sides until browned. Remove beef from the pot and set aside.

Add the remaining 10 ml of cooking oil to the pot. Add the diced onion, carrots, and potatoes and cook for 8-10 minutes, stirring occasionally, until slightly softened and beginning to brown.

Add the minced garlic and dried herbs (rosemary/thyme) and cook for 1 minute until fragrant.

Return the seared beef to the pot. Pour in the water and soy sauce (or tamari). The liquid should mostly cover the ingredients; add a little more water if needed.

Bring the stew to a simmer, scraping the bottom of the pot to loosen any browned bits. Reduce heat to low, cover, and simmer for 60-75 minutes, or until the beef is tender and the vegetables are soft.

In a small bowl, whisk together the cornstarch with 30 ml of cold water to create a slurry. Stir the slurry into the simmering stew. Cook for another 5 minutes, stirring, until the stew has thickened.

Taste and adjust seasoning with salt and pepper if needed. Serve hot.
