Instructions

Rinse quinoa thoroughly. Cook quinoa according to package directions. (Typically 1 part quinoa to 2 parts water, simmer for 15 minutes, then rest for 5 minutes).

While quinoa cooks, peel and dice the celeriac, beetroot, and onion into small, uniform pieces.

Heat olive oil in a large skillet or non-stick pan over medium-high heat.

Add ground beef to the skillet, breaking it apart with a spoon. Cook until browned, about 5-7 minutes. Drain any excess fat.

Add diced celeriac, beetroot, and onion to the skillet with the beef. Season with thyme, salt, and black pepper.

Cook, stirring occasionally, for 8-10 minutes, or until the vegetables are tender-crisp.

Once quinoa is cooked, fluff with a fork.
