Hearty Beef and Vegetable Pasta

Ingredients (Serves 2)

Lean ground beef (90%)225 g
Dry pasta (check dairy-free)40 g
Onion50 g
Garlic6 g
Bell pepper75 g
Canned crushed tomatoes200 g
Olive oil2.5 ml
Dried herbs (oregano, basil)2.5 g
Salt1 g
Black pepper0.5 g

Instructions

Cook pasta according to package directions. Drain and set aside.

Mince onion and garlic. Dice bell pepper.

Heat olive oil in a large pan or pot over medium heat.

Add ground beef and cook, breaking it up with a spoon, until browned. Drain off any excess fat.

Add onion and bell pepper to the pan and cook until softened, about 5-7 minutes.

Add garlic and dried herbs and cook for 1 minute until fragrant.

Pour in the crushed tomatoes, salt, and pepper. Stir to combine.

Bring the sauce to a simmer, then reduce heat and let it cook for at least 15-20 minutes, stirring occasionally, to allow flavors to meld.

Add the drained pasta to the sauce and toss to coat.
