Hearty Beef and Vegetable Pasta

Ingredients (Serves 2)

Lean beef (sirloin or flank steak), thinly sliced6 oz
Pasta (dry), dairy-free3 oz
Medium onion, diced0.3 cup
Garlic, minced1 clove
Frozen mixed vegetables1.5 cup
Crushed tomatoes0.8 cup
Dried Italian herbs0.5 tsp
Olive oil1.5 tsp
Salt0 pinch
Black pepper0 pinch

Instructions

Cook pasta according to package directions. Drain and set aside.

Heat olive oil in a large skillet or pot over medium-high heat.

Add the thinly sliced beef and cook until browned on all sides. Remove beef from skillet and set aside.

Add the diced onion to the skillet and cook until softened, about 3-4 minutes.

Add the minced garlic and cook for 1 minute until fragrant.

Stir in the crushed tomatoes, frozen mixed vegetables, and dried Italian herbs. Bring to a simmer.

Return the cooked beef to the skillet. Reduce heat to low, cover, and simmer for 10-15 minutes, or until beef is tender and vegetables are heated through.

Season with salt and pepper to taste.

Add the cooked pasta to the skillet with the beef and vegetable sauce. Toss gently to combine.
