Hearty Beef and Potato Stew

Ingredients (Serves 2)

Extra-lean ground beef600 g
Potatoes500 g
Carrots300 g
Onion200 g
Canned crushed tomatoes800 g
Garlic (minced)20 g
Water400 ml
Olive oil30 ml
Dried oregano4 g
Dried basil4 g
Salt4 g
Black pepper2 g

Instructions

Cut the potatoes and carrots into roughly 2-3 cm chunks. Dice the onion.

Heat olive oil in a large pot or Dutch oven over medium-high heat.

Add the ground beef and cook, breaking it up with a spoon, until browned. Drain off any excess fat.

Add the diced onion and cook until softened, about 5-7 minutes.

Stir in the minced garlic and cook for 1 minute until fragrant.

Add the diced potatoes, carrots, crushed tomatoes, water, dried oregano, dried basil, salt, and black pepper to the pot.

Bring the mixture to a simmer, then reduce heat to low, cover, and let it simmer gently for at least 60-90 minutes, or until the vegetables are very tender and the flavors have melded.

Stir occasionally to prevent sticking.
